BAKED LIMAS WITH TOMATO SAUCE | |
2 2/3 c. dried lima beans 6 c. warm water 2 tsp. salt 8 slices bacon 1 c. diced celery 1 c. minced onion 1/4 c. flour 3 c. canned tomatoes 2 tsp. salt 1/8 tsp. pepper Wash beans, pick over, cover with 6 cups hot water to which 1 tablespoon plus 1 teaspoon baking soda has been added and soak 4 hours. Drain and wash beans. Place in large pot, add 6 cups water, cover and simmer 1 1/2 hours or until tender. Add salt last 30 minutes of cooking. Drain any liquid remaining. Liquid can be used in soup. Dice bacon in a skillet and cook until almost brown; add celery, and onions, continue cooking until bacon is crisp. Stir in flour, add tomatoes, salt and pepper. Place beans in casserole; pour sauce on top. Bake 40 to 60 minutes at 350 degrees. |
