SWEET POTATO MUFFINS 
1/4 c. butter
1/2 c. brown sugar
2 eggs, beaten
1 c. mashed potatoes
1 tsp. frozen
Orange juice
2 c. self-rising flour
1/2 tsp. nutmeg
1/4 tsp. allspice
1/4 tsp. mace
3/4 c. chopped nuts

Preheat oven to 350 degrees. Grease well 12 regular muffin tins or 24 small ones. Cream butter and sugar well. Add eggs, potatoes and orange juice. Beat until well blended. Add flour, spices and nuts. Stir until just mixed. Fill muffin tins 3/4 full. Bake 18-20 minutes.
