HUMMUS 
1 (1 lb.) can chick peas, drained and rinsed
1/2 c. olive oil
6 tbsp. sesame seed paste (tahini)
5 tbsp. lemon juice, strained
1 med. clove garlic, mashed
1/2 tsp. salt
3 tbsp. olive oil
3 tbsp. sesame seeds, lightly toasted
3 tbsp. minced fresh parsley

Combine first 6 ingredients in food processor or blender. Blend until smooth. Transfer to a shallow serving dish. Drizzle with olive oil. Sprinkle with sesame seeds and parsley.

This is great served with toasted pita triangles.
