1 lb. ground beef
1 1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
2 tomatoes, sliced
1 c. shredded cheese

Heat oven to 400 degrees. Grease pie plate or 10" x 11 1/2" pan. Brown beef and onion; drain. Stir in salt and pepper. Spread in pie plate. Beat milk, Bisquick, and eggs until smooth, about 1 minute. Pour into pie pan. Bake 25 minutes, then top with tomatoes and cheese. Bake another 5 to 8 minutes longer or until knife inserted in center comes out clean.
