1/4 c. grated Cheddar cheese 1 c. Bisquick or pancake flour 2 c. grated zucchini 2 eggs Mix cheese, zucchini, eggs and add Bisquick (or pancake flour). Cook on medium hot griddle with oil or shortening coating. Use 1 tablespoon oil and add to mixture if using for waffles. | |

I made the pancake recipe this morning with grated zucchini I had done a couple of days ago. Delicious is all that I can say. Light and fluffy. I used the lowfat Bisquick. A real keeper.
