MORE OR LESS JAMBALAYA | |
(Amounts can be varied for all ingredients). I: 2 bay leaves 1/2 tsp. (it's HOT) cayenne pepper 1 tsp. oregano 1 1/4 tsp. white pepper 1 tsp. black pepper 1/4 tsp. thyme Salt to taste II: Saute, stirring frequently, over medium heat, using about 3 tablespoons oil (or your preferred fat) : 2 c. chopped onions 1/2 c. chopped green onions 1/2 c. celery 1/4 c. green bell pepper Cook for about 5 minutes and then add 1 1/2 teaspoons minced garlic and the seasoning mix. Cook and stir for two minutes. III: Mix in a large bowl, the onion-seasoning mixture with 4 cups cooked rice and 2 cups chicken cut into bite-size pieces. Add tomato sauce until moist but not soggy. Pour into baking pan, cover tightly with foil and bake at 350 degrees for about 30 minutes. Sprinkle with warm boiled shrimp. Remove bay leaves and serve. Polish smoked sausage, sauteed, can be added to the mixture before baking as well as many varieties and (or) combinations of meats. All meats, including the chicken should be cooked before baking. Additional oil or fat can be added before baking. |
