CHICKEN OLE 
1 chicken, boiled or baked (deboned and cut up)
1 lb. Velveeta cheese
2 cans cream of chicken soup
1 pt. sour cream
1 can crushed Rotel tomatoes and green chilies
1 (16 oz.) bag Nacho Cheese Doritos, crushed
2 stalks celery, chopped
1/3 c. chopped onion
1 1/4 c. chopped green pepper
1 stick butter

Saute celery, onion, and green pepper in 1 stick butter until crispy tender. Add chicken soup; blend. Add cubed Velveeta cheese; stir well until cheese is melted and mixture is well blended.

In separate bowl mix chicken, Rotel tomatoes and green chilies, sour cream and 3/4 bag crushed Doritos. Add cheese mixture and blend well.

Rub butter on 9x13 baking pan, sides and bottom. Pour casserole mixture into pan. Sprinkle remaining Doritos on top. Bake at 350 degrees for approximately 45 minutes or until sides start to bubble. Serve.
