SPINACH PIE 
1 (9-inch) pastry (bottom)
10 oz. chopped frozen spinach
3 beaten eggs
2 tbsp. Romano cheese
1 c. milk
1/4 c. melted butter
2 tbsp. flour
1 c. crumbled feta cheese
1/2 tsp. white pepper
1/4 tsp. salt

In a 400 degree oven, bake pastry 3 minutes, remove from oven and prick. Bake 5 minutes more and remove from oven. Cook spinach as directed. Press water out of spinach. Combine thoroughly with all of the ingredients, tossing as you mix ingredients and pour into pie shell. Bake at 350 degrees for 35 to 50 minutes. Insert knife blade in center of pie to check for doneness. Knife should come out clean when pie is done.
