MAMA MABEL'S SWEET POTATO PIE 
1 1/2 c. cooked mashed sweet potatoes
1 stick butter
1 1/2 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/8 tsp. allspice
1/2 tsp. salt
1 tsp. vanilla
2 eggs, well beaten
1 c. evaporated milk
1 (9") pie shell

Now when you buy your sweet potatoes, don't get them too big. They won't boil quite right. Get some medium sized ones.

Boil potatoes in a big pot. While they're boiling, get your oven started. Set it to about 350 degrees. Also get mixing bowl ready when it comes time to put your spices together.

When potatoes are finished, run under cold water for a spell so you can peel them without getting burnt. But don't let them get cold, because you want potatoes to be warm enough to melt butter.

Put potatoes in bowl and mash up real good. Put butter in potatoes and mix in until it melts.

Take sugar and spice ingredients and blend them together in a small bowl. Last, add vanilla in with the spices, then add it all to the potatoes. Beat eggs real well. Put eggs in with all the rest of the stuff.

Finally, take evaporated milk and start adding it a little at a time to potato mixture. Keep an eye on it because you don't want it to get too juicy. If you feel you need to add a bit more, go ahead. But be careful, you don't want it too juicy.

Pour pie mixture into the shells and set pie in oven. Bake about 35 minutes or so.

I guiltily admit That I have cheated on this recipe and used canned yams in lieu of fresh sweet potatoes, Splenda in place of sugar (1/3 the amount) & store bought graham cracker pie crusts (9" & the little tiny, individual ones). Everybody loves em!

This is one of the best and easiest Sweet Potato Pie to make. EVERYBODY loves it!
Filling will be soupy and it's suppose to be. It will bake up firm. I double the recipe and it always get at least 3 pies. I also use deep dish crust.
