MANDARIN SPINACH SALAD 
1 lb. spinach, washed, stemmed & dried
1 whole fennel, washed & diced like celery
2 sm. cans mandarin oranges, drained

DRESSING:

2 tsp. onion, grated
1 scant tsp. salt
1/2 tsp. pepper
2 tbsp. Dijon mustard
2 tbsp. wine vinegar
8 tbsp. oil
1/4 tsp. lemon juice

Dressing: Mix onion, salt, pepper, mustard and wine vinegar. Beat in oil until consistency of light mayonnaise. Add lemon juice. Pour over salad just before serving.
