MANDARIN SPINACH SALAD 
6 c. washed torn spinach
1 c. diagonally sliced celery
2 green onions with tops, chopped
1 can (11 oz.) mandarin oranges, drained
1 pkg. (2 oz.) slivered, toasted almonds
Sweet and Sour Dressing (see below)

Combine first three ingredients and toss gently. Place in bowl or on platter and place oranges and almonds on spinach. Add dressing just before serving.

SWEET AND SOUR DRESSING:

1/4 c. vegetable oil
2 tbsp. sugar
5 drops of hot sauce
1 tsp. chopped fresh parsley or 1/4 tsp. dried parsley
Dash of pepper
2 tbsp. vinegar
1 tbsp. honey
1 tsp. salt

Mix all ingredients together. Make dressing in a separate container to be used just before serving.
