MANDARIN SPINACH SALAD 
8 c. washed, torn spinach
1 c. diagonally sliced celery
2 green onions with tops, chopped
1 (11 oz.) can mandarin oranges, drained
1 (2 oz.) pkg. slivered almonds, toasted
Sweet and sour dressing (see recipe in book)

Combine spinach, celery, and green onions; toss gently. Place on a large serving platter; arrange mandarin oranges and toasted almonds in desired pattern on spinach mixture. Serve with the sweet and sour dressing. Yield: 6-8 servings.
