DANISH AEBLESKIVIR (PANCAKE BALLS) | |
2 cups buttermilk 1/2 tsp. salt 2 cups flour 1 tsp. baking soda 3 eggs, separated 2 T. sugar 1 tsp. baking powder Beat egg yolks, add sugar, salt and buttermilk. Then add flour, soda and baking powder which have been sifted together. Lastly fold in stiffly beaten egg whites. You will need a special pan with depressions in it called an aebleskivir pan. Place a small amount of oil in each depression in pan and heat until dough sizzles when put in each depression 2/3 full. Cook until bubbly, turn carefully with a fork or toothpick and finish baking on other side. Serve with maple syrup, jam, brown sugar, or granulated sugar. A Danish delicacy. |
