BELGIAN FRIED POTATOES 
Peel potatoes and cut into lengthwise strips. if strips are cut thick the potatoes will be mealy inside. If cut thin the potatoes will be crisp.

Arrange potatoes in shallow pan and brush generously with fat. Sprinkle with salt and pepper.

Bake the potatoes in a hot 450 degree oven until brown on the bottom. Turn with a pancake turner and brown on the other side. Turn out on paper towels and sprinkle with more salt if necessary, approximately 45 minutes.

HINTS: Baker type potatoes best average a good size potato for each person.
