BEEF BRISKET 
6 lb. beef brisket
2 onions, sliced
1 minced garlic clove
3/4 c. brown sugar
1/2 c. wine vinegar
1 c. catsup
1 c. water
1 tbsp. salt
Freshly ground pepper

Brown brisket. Add onions, garlic and brown onions. Combine remaining ingredients and pour over meat. Cover. Roast at 325 degrees for 2 1/2 to 3 hours or until tender. Slice against grain and serve.
