BASIC PANCAKE BATTER 
2 c. sifted all-purpose flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
1 egg
1 1/2 c. milk
3 tbsp. oil

Mix all together. Pour 3 tablespoons batter in skillet. Brown on both sides until batter is done.

Simple, light and delicious. Had run out of mix, so I found this recipe. I sliced and cored ( and peeled) an apple and dipped the "rounds" in batter before putting them on the griddle. yummy.

I caramelized a banana by splitting it, then quartering it, then pan frying it in some olive oil and butter, latter part I added about a tsp of brown sugar...let that cool, then mixed it with my beaten egg, oil and a substitute, Almond milk...folded in the egg mixture with the dry and made cakes.

Very simple and very good. I add chocolate chips at times for the kids. Also try with a touch of vanilla extract. I make up the dry ingredients and keep in the cupboard... then add the liquid when I'm ready to cook... store extra batter in fridge

I only needed enough for the 4 or us to have a couple each so I halved the recipe (except the egg - I used a small egg). I added about the same amount of oil that the whole recipe calls for originally and about a 1/3 of a cup more milk and instead of sifted all purpose flour I used unsifted bread flour. Hot non-stick skillet with no oil on medium low heat and poured them to about 5" across. Oh, and I also added 1/2 tsp. of vanilla extract to batter... My hats off to this recipe, I got 4 thumbs up!
