SUPER EASY BROCCOLI CASSEROLE 
2 pkgs. frozen chopped broccoli
1/2 to 1 sm. box Velveeta cheese (add or reduce to individual taste)
1 1/2 sticks butter
1 tube Ritz crackers

Drop frozen broccoli into boiling unsalted water. Boil 5 minutes or until heated thoroughly. Melt and stir over low heat 1 stick butter and cheese, cut into cubes, will melt faster. Crush crackers in large bowl. Melt remaining 1/2 stick butter and add to cracker crumbs, mix well. Drain broccoli well.

Add cheese/butter mixture to well-drained broccoli. Pour into large casserole dish. Immediately before serving, add cracker crumbs to top of broccoli/cheese and put under broiler until golden brown.
