SCALLOPED PORK AND RICE 
1 lb. pork, cubed
1 tbsp. shortening
1 onion, diced
1 tsp. paprika
1 tsp. salt
1 c. rice
1 sm. can sauerkraut
1/2 pt. sour cream

Melt shortening; add diced onion and brown slightly. Add paprika, pork and salt to taste. Cook until meat is done, about 1 hour. Add water to keep meat from burning. Cook rice in boiling salted water. In a casserole, arrange a layer of meat mixture, layer of rice and layer of sauerkraut. Continue until all ingredients are in casserole. Pour sour cream over all. Bake in 350 degree oven for about 1 hour until top is browned.
