TUFFY'S BUTTERFLY FRIED SHRIMP 
1 lb. jumbo shrimp
1 1/2 c. flour
2 c. buttermilk
4 c. crushed saltine crackers
Cooking oil for deep frying

To Clean Shrimp: Remove shell, leaving tail. Butterfly the shrimp by slicing down the back. Run under water to clean.

To Batter Shrimp: Dredge in flour, dip in buttermilk, roll in cracker crumbs. Can be done ahead to refrigerate or freeze. Deep fat fry until golden brown. Bet you can't eat just one.
