GRITS CASSEROLE | |
4 c. water 1 c. quick cooking grits 1 lb. pork sausage, browned & drained 1/2 c. milk 1 tsp. salt 4 eggs, lightly beaten 1 1/2 c. (6 oz.) shredded sharp Cheddar cheese, divided 1/4 c. butter, softened In a saucepan, bring water and salt to a boil. Slowly stir in grits. Reduce heat and cook 4 to 5 minutes, stirring occasionally. Remove grits from heat and add small amount of grits to eggs. Return to saucepan. Stir in sausage, 1 cup cheese, milk, and butter, stirring until butter melts. Pour into a greased 13 x 9 x 2 inch baking pan. Sprinkle with remaining cheese. Bake at 350 degrees for 50 to 55 minutes until the top begins to brown. Yield 8 to 10 servings. |
