SAUSAGE CASSEROLE 
1 c. quick cook grits
1 lb. pork sausage
Sm. onion, chopped
1/3 c. chopped green pepper
1 1/2 c. grated sharp cheddar cheese
3 tbsp. horseradish

Divide cheese. Cook grits, put aside. Saute crumbled sausage, onions, green peppers on medium heat. Drain well. Combine grits, meat mixture, 1 cup cheese, horseradish. Spoon mixture into 10 x 6 x 2 inch baking dish.

Bake at 350 degrees for 15 minutes. Sprinkle other cheese on top. Bake 5 minutes. This recipe can be made a day before serving. Great for a brunch.
