IMPOSSIBLE PUMPKIN PIE 
3/4 c. sugar
1/2 c. Bisquick baking mix
2 tbsp. butter
1 (13 oz.) can evaporated milk
2 eggs
1 (16 oz.) can pumpkin
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla

Heat oven to 350 degrees. Grease pie plate, 9x2 inches or 10x2 inches. Beat all ingredients until smooth, 1 minute in blender on high or 2 minutes with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, 50 to 55 minutes.

This pie is great, because it makes its own crust and its quick and easy.
