MARINATED CARROTS 
2 lbs. carrots, sliced
1 sm. onion, chopped
1/2 c. vinegar
1/2 c. oil
1 tsp. sugar
1 tbsp. mustard

Combine in blender the vinegar, oil, sugar, and mustard. Cook carrots until tender in salted water. Pour sauce over vegetables. Refrigerate 24 hours before serving.
