CRISPY BAKED CHICKEN | |
1/2 c. corn meal 1/2 c. all-purpose flour 1 1/2 tsp. salt 1 1/2 tsp. chili powder 1/2 tsp. dried oregano 1/4 tsp. pepper 3 to 3 1/2 lbs. broiler/fryer chicken, cut up 1/2 c. milk 1/3 c. butter, melted Preheat oven to 375°F. Combine the corn meal, flour, salt, chili powder, oregano and pepper. Dip chicken in milk, then roll in the corn meal mixture. Place in a greased 13 x 9 x 2 inch baking pan. Drizzle with butter. Bake uncovered for 50 to 55 minutes or until juices run clear. |
