CHILI RELLENO CASSEROLE | |
1 lb. ground beef 1/2 lb. Cheddar cheese (grated) 1/2 lb. Monterey Jack cheese (grated) 2 cans chopped chilies 2 eggs (separated) 3/4 c. evaporated milk 1 1/2 tbsp. flour Preheat oven to 350 degrees F. Brown ground beef and drain in a 9 inch casserole dish. Layer half of ground beef, half of Cheddar cheese, half of Monterey cheese and 1 can chopped chilies. Next layer the rest of ground beef, Cheddar cheese, Monterey Jack cheese and 1 can chopped chilies. Beat egg whites and yolks separately. In yolks add milk and flour, then fold in stiffly beaten egg whites. Pour over mixture. Bake 45 minutes. Serves 6. (Serving suggestion: Serve with a salad, refried beans, tortilla chips and a Mexican punch.) |
