COLD WHITE RICE 
1 c. rice
3 scallions
1 tbsp. chives
1/2 onion, chopped fine
1 c. mayonnaise
1 pinch of ginger
1 capful lemon juice

Cook rice and cool. Add scallions, chives, onion and mix with cup of mayonnaise. Add ginger, lemon juice. Mix and serve. Makes 4 servings.
