COLD SESAME NOODLES 
Combine in saucepan:

3 tbsp. soy sauce
2 tbsp. rice or white wine vinegar
1/2 tsp. dried hot pepper flakes
2 tbsp. packed brown sugar
1/2 c. creamy peanut butter
1 tbsp. Oriental sesame oil
1 tsp. grated fresh ginger root
1/2 c. chicken broth

Simmer over low heat until thick and smooth. Cool slightly. Cook 1 pound of lo mein, linguini or spaghetti.

Toss pasta with sauce. Serve at room temperature. Can garnish with chopped scallion and cucumber strips. Serves 4 to 6.
