SESAME NOODLES WITH CHICKEN 
1 lb. pasta, preferably Japanese/Chinese noodles
1 whole breast of chicken, skinned & boned
1 green pepper
1 red pepper
2 carrots
10 broccoli flowers
3-5 scallions, diced finely
3 tbsp. soy sauce
1 tsp. sesame oil (toasted, from Oriental store)
Few dashes "hot oil" from Oriental store
3-5 scallions, diced finely

Cook chicken, the best way is to grill it, but baking or boiling will do. Slice the chicken in 1/8 inch strips. Slice the green pepper, red pepper and carrots into thick julienne strips. Blanch the strips and broccoli flowers in boiling water for a few minutes. (You can add any other vegetables desired, should be sliced and blanched.)

Meanwhile, cook pasta al dente. Rinse pasta under cool water until pasta is cold and place in large bowl. Add chicken, vegetables, scallion and mix together. Add soy sauce, sesame oil and hot oil as listed above or to taste. Chill and serve.
