FETTUCCINE ALFREDO | |
1 lb. fresh fettuccine (spinach flavor is very good) 1/2 lb. sliced fresh mushrooms 1/2 lb. chopped thin & tiny ham 4 tbsp. butter 1/4 c. parmesan cheese 1 c. whipping cream Salt & pepper to taste Saute mushrooms and 1 clove crushed garlic in 1 tablespoon of butter until soft. Add ham and remove from heat. While pasta is cooking, gently whip cream with a whisk until thickened but not stiff. Drain cooked pasta. In large serving bowl, add remaining butter and pasta. Mix until butter is melted. Add sauteed mushrooms, ham, Parmesan and whipping cream. Mix and season as desired. Serve with additional Parmesan and fresh chopped parsley. Serves 4-6. |
