LENTIL SOUP 
1 lb. lentils
Lg. can V-8 juice
2 c. each of carrots, celery, onion
4 cloves minced
Fresh grated Parmesan

Mince or finely chop vegetables. (Works great in a food processor.) Sort and rinse lentils. Cover with water; add vegetables and simmer. After 15 minutes, add V-8 juice. Simmer an additional 15 minutes. Sprinkle grated fresh Parmesan cheese on individual servings and pass additional cheese if desired.
