OAT BRAN MUFFINS (LOW
CHOLESTEROL)
 
1 1/2 c. oat bran
1 c. flour
1/4 c. brown sugar
1 tsp. baking powder
1/4 tsp. salt
3/4 c. milk
1/2 c. egg substitute
1/4 c. honey
2 tbsp. vegetable oil

Stir lightly with spoon. Spoon into muffin tins and bake at 350 degrees for about 15 minutes.

Makes 12.

VARIATIONS:

Add 1/2 cup chopped pears and 1 teaspoon cinnamon. Add 1/2 cup mashed bananas. Add 1/2 cup blueberries. or make up your own variation.
