CHICKEN CACCIATORE 
1 whole chicken, cut up
2 cans Italian style stewed tomatoes
1 can tomato sauce
5 cloves garlic, diced
1 sm. onion, diced
1/2 lb. mushrooms, sliced
1 bay leaf
2 basil leaves, diced
2 tbsp. olive oil
Salt & pepper
Oregano & Italian seasoning to taste
1 tbsp. butter

Heat olive oil in deep pot or frying pan. Brown chicken in oil and remove. Add garlic, onion, mushrooms and basil to pan with butter and simmer until tender. Add tomatoes and heat mixture. Place chicken in Pyrex baking dish while waiting. Pour tomato mixture over chicken after adding final seasoning to taste and heat at 350 degrees for 1 hour. Serve with your choice of pasta.
