HOT CHICKEN SALAD 
3 to 4 c. baked chicken breast
2 c. chopped celery (cook 5 to 10 min.)
1 c. slivered almonds
1 can water chestnuts (slivered)
1 can pimentos (chopped)
1 tsp. salt
1/4 tsp. pepper
1 tbsp lemon juice
1 1/2 c. Hellmann's Mayonnaise

Mix all ingredients together. Add 1 cup grated Sharp Cheddar Cheese and mix. Spray casserole with Pam. Pour into casserole. Bake 30 minutes at 350 degrees. Put canned onion rings on top of the casserole the last 5 to 10 minutes.
