8 med. potatoes, mashed
1 (8 oz.) pkg. cream cheese
1/4 c. half-and-half
1 tsp. salt
1 tsp. butter

Beat cream cheese until fluffy. Add salt and butter to hot mashed potatoes. Gradually add potatoes to cheese mixture and add half and half. Beat all together until smooth.

Spoon into buttered casserole and bake 30 minutes at 350 degrees. This can be made 2 days ahead and baked when needed. This can also be frozen. When ready to use, thaw and bake as directed.
