LEMON EXTRACT CAKE 
1 lb. butter
2 1/3 c. sugar
6 eggs
3 oz. lemon extract
4 c. sifted flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 lb. candied cherries
1 lb. candied mixed fruit
1 box white raisins
1 lb. shelled pecans (4 c.)

Cream the butter and sugar. Add eggs and beat well. Add the lemon extract and blend. Sift the dry ingredients together and add to the creamed mixture. Add fruit and nuts. Bake in tube pan at 300 degrees for 2 1/2 to 3 hours.
