JUDY'S BAKED BEANS 
1/4 lb. bacon strips (4-6 strips)
6 c. water
1/2 c. firmly packed dark brown sugar
1 lemon (juice)
1 tsp. salt
1 (1 lb.) pack dried pea beans
1 lg. onion, chopped (1 c.)
1/2 c. molasses
2 tsp. prepared mustard

Clean beans. Place in large saucepan and add water. Bring to a boil. Remove saucepan from heat and cover. Allow to stand 1 hour. Add onion to saucepan. Heat to boiling; reduce heat and simmer 1 1/2 hours until skins of beans burst. Stir brown sugar, molasses, mustard and salt into saucepan until well blended. Layer beans and sliced bacon into a 10 cup bean pot or casserole. Cover. Bake 3 1/2 hours; remove cover. Bake 30 minutes more, or until beans are dark brown.
