GLORIFIED BANANA RICE 
2/3 c. quick cooking rice
3/4 c. water
1/2 c. pineapple juice
1/2 tsp. salt
12 marshmallows, quartered
6 maraschino cherries, diced
3/4 c. drained, canned, crushed pineapple
1 med. banana, diced
1 c. whipping cream
1 tbsp. sugar

Step 1: Combine quick cooking rice, water, pineapple juice, and salt in saucepan. Mix just until all rice is moistened. Bring quickly to a boil over high heat. Cover. Simmer 5 minutes. Remove from heat; let stand 13 minutes.

Step 2: Add marshmallows, cherries, pineapple, and banana. Cool. Whip the cream and add sugar, mixing thoroughly. Then fold whipped cream into rice and fruit mixture. Serve at once or chill about 1 hour.
