SIMPLE BASIC YEAST DOUGH 
1 pkg. active dry yeast
1 tbsp. sugar
2 tbsp. warm water
1 c. milk, scalded
1/2 c. butter
1/2 c. sugar
2 eggs, well beaten
1 tsp. salt
4 c. enriched flour, sifted

Combine together yeast, 1 tablespoon sugar and warm water. Scald milk, stir in butter and 1/2 cup sugar. Cool to lukewarm. Add eggs, salt and 2 cups flour, beat thoroughly. Add dissolved yeast and remaining flour, beat five minutes. Do not knead. Brush with shortening. Cover, let set in warm place to rise until double in bulk. Turn out on lightly floured surface. Knead for 1 minute. Shape into rolls. Bake at 375 degrees until brown, 20 to 25 minutes.
