YEAST DOUGH 
2 pkgs. dry powdered yeast
1/2 c. warm water
1/2 c. butter
1/2 c. sugar
1 tsp. salt
1 tsp. grated lemon rind
1 c. milk, scalded
5 c. flour
4 egg yolks
1 egg
Fruits or nuts, optional

Dissolve yeast in warm water. Mix together softened butter, salt, sugar, and lemon rind. Pour scalded milk over mixture and stir until butter is melted. Cool to lukewarm. Add yeast and 2 cups flour, stir well. Set in a warm place, cover with a thin cloth and let rise until double in size.

Stir in egg yolks, egg and 3 cups flour. Mix well. Place dough on a floured board and knead 5 minutes. Put it in a greased bowl, cover and set in a warm place to rise to double in size, approximately 2-3 hours. Punch down the dough. If adding fruit or nuts, knead them in at this time. If nothing is added, knead gently, let stand for 10 minutes. Shape to your recipe.
