SWEET POTATO SCALLOP 
6 med. sweet potatoes, boiled OR 2 lbs. canned
2 oranges, peeled & sliced
1/4 c. brown sugar
1 1/2 tsp. cornstarch
1/4 tsp. salt
1/4 tsp. pumpkin pie spice
1 c. orange juice
2 tbsp. butter

Cut potatoes into 1/4 inch slices. Layer in 1 1/2 quart casserole dish alternately with orange slices.

In saucepan, combine brown sugar, cornstarch, salt and spice. Gradually stir in juice and butter. Bring to boil over medium heat, stirring constantly. Boil gently 2 minutes. Pour over potatoes and oranges. Bake at 350 degrees for 45 minutes. Serves 6.
