ZUCCHINI CASSEROLE 
3 c. squash, sliced and lightly cooked
1 can cream of chicken soup
1/2 c. sour cream
2 shredded carrots
1 sm. onion, chopped
2 c. stuffing mix
1/3 c. butter

Mix in casserole (1 1/2 quart size) squash, chicken soup, sour cream, carrots and onion. Mix together stuffing mix or crushed croutons and butter. Mix 2/3 of stuffing mix into squash mixture. Sprinkle top with remaining stuffing mix. Bake at 350 degrees for 30 minutes.
