SHCHI (SAUERKRAUT SOUP) 
1 onion, chopped
Butter
Flour
1 tbsp. tomato puree
1 1/2 lb. sauerkraut
8 c. meat stock or mushroom stock
Sour cream, if desired

Brown chopped onions in butter in an iron frying pan. Stir in flour. Add tomato puree. Add sauerkraut. Cover and simmer very slowly. Add the meat stock or if a meatless soup is desired, mushroom stock. Simmer 2 hours. Sour cream is served if desired. Shchi is good with buckwheat kasha. Serves 6.

Lenten with mushroom stock.
