MID WEST MARINATED CARROTS 
2 lbs. carrots
1 lg. green pepper
1 med. onion
1/2 c. vinegar
1/2 c. sugar
1/2 c. oil
2 tbsp. oil
2 tbsp. ketchup
1 can tomato soup

Microwave vegetables until barely tender. Bring vinegar, sugar, oil, ketchup and soup to a boil and pour over vegetables and refrigerate. Make a day or two ahead of use.

Since microwave ovens vary in power, you may need to adjust your cooking time.
