OIL COOKIES 
2 eggs
1/4 c. oil
1/2 c. sugar
1 tsp. vanilla
2 1/2 c. flour
1 1/2 tsp. baking powder
Salt (pinch)

Mix together eggs, oil, sugar and vanilla. Combine dry ingredients. A little at a time add dry ingredients to egg and oil mixture. When dough is mixed take a ball at a time and roll like a shake (about 4 inches) and fold in half and twist. Bake at 350 to 375 degrees for 5 to 7 minutes. When cool add icing.

ICING:

2 c. or more powdered sugar
1 tbsp. butter
1 tsp. vanilla
Milk, little at a time

Icing consistency should be thick enough to spread and dry. You may add food coloring to icing to make more festive.

Great cookies. I made them. I didn't get the idea of the shapes, they only made huge thick cookies, so i made round smaller ones. This is a great sugar cookie recipe and way healthier than cookies made with margarine or butter etc. Five stars.

The cookies are made into a long narrow shape because, I believe, they are a dipping cookie. I don't bother with the icing. Not necessary. This is an adequately sweetened, delicious dipping or plain eating cookie. Glad I found it - I had run out of butter and was craving cookies.

So easy. It's so messy making cookies and I get super frustrated because I need a new stand mixer. These were so easy. I added lemon juice and lemon extract and made them into balls and added powdered sugar on top after cooling. Such a refreshing snack! Thank you!
