ZUCCHINI BAKE 
1 c. chopped zucchini
1 c. chopped tomato
1/2 c. chopped onion
1/2 c. grated Parmesan cheese
1 c. milk
2 eggs
1/2 c. Bisquick mix
1/2 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Grease deep pie plate; sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients until smooth, in blender or by hand. Pour over vegetables in pie plate. Bake until knife inserted in center comes out clean, about 35 minutes.
