TURNIP GREENS WITH CORNMEAL
DUMPLINGS
 
4 lbs. mixed greens (turnips and mustard)
1 lb. salt pork
1 tsp. salt
1 tsp. sugar
1 pod green pepper or 1 tsp. crushed red pepper

Pick and wash greens in cold water with 1/4 cup of salt added. Wash until water is clear of grit and sand. In a large pot, put 2 1/2 quarts of water and the rinsed salt pork. Boil for 1/2 hour. Add greens, salt, sugar and pepper. Cover and simmer for 2 hours.

DUMPLINGS:

1 1/2 c. white cornmeal
4 tsp. all purpose flour
1 tsp. baking powder
1 tsp. salt
1 c. pot liquor from pot or 1 c. hot water (boiling)

Mix cornmeal, salt and pot liquor or boiling water, stirring constantly until mixture is stiff. Spoon one rounded tablespoon at a time onto simmering greens. Cover and simmer 30 minutes.
