BEEF ENCHILADAS 
1 lb. ground hamburger
1 pkg. of taco seasoning
3/4 c. water
1 jar taco salsa or picante sauce
1/2 lb. grated Monterey Jack cheese
1/2 lb. Cheddar cheese
1/2 c. chopped mushrooms
1/2 c. chopped black olives
6 or more corn tortillas

pan fry tortillas in oil 4 seconds and drain. Cook ground hamburger, taco seasoning and water like making tacos. Place one or two teaspoons of beef, mushrooms, olives, and cheeses on fried tortilla and roll. Place in greased dish. Top tortillas with salsa and any remaining mushrooms, olives and lots more cheese. Bake in moderate oven (350 degrees) for 20 minutes; garnish with sour cream, avocados and tomato wedges.
