CHICKEN RICE SOUP 
2 tbsp. vegetable oil
1 med. onion, chopped
2 celery stalks
1 sm. green pepper
1 clove garlic, minced
2 sm. tomatoes, diced
3 1/2 c. chicken broth
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. rice, uncooked
2 c. chicken, deboned

Cook onion, celery, pepper, and garlic in oil approximately 5 minutes. Add tomatoes, broth, salt, pepper, and rice. Bring to a boil. Stir often. Reduce heat; cover and simmer 15 minutes. Add chicken and cook 5 minutes or until rice is tender.
