CENTRAL GROCERY'S MUFFULETTA 
1 lg. loaf of round Italian bread
1/3 lb. sliced salami
1/3 lb. sliced ham
1/3 lb. sliced Provolone cheese

OLIVE SALAD:

(Make ahead).

2/3 cup green olives, chopped
2/3 cup black olives, chopped
1/4 cup pimiento, chopped
3 cloves minced garlic
1 mashed anchovy
1 tbsp. capers
1/3 cup chopped parsley
1 tsp. oregano
1/4 tsp. (or more) black pepper
1/2 cup olive oil

Slice bread horizontally and scoop out about half the dough from the top and bottom. Brush the bottom with olive oil (or olive salad juice). Layer cold cuts and add as much olive salad as you can. Put the top on. Slice in quarters.

Mix all ingredients; cover and marinate at least 12 hours. Keeps a long time in the refrigerator.

Serves 4.
