BAKED CARROTS 
3 c. sliced cooked carrots
2 tbsp. chopped onion
1/2 c. Velveeta cheese, cubed
1/4 c. butter, melted
Salt to taste
Crushed potato chips

Mix carrots, onion, cheese and butter; season with salt. Spoon into a 1 quart baking dish. Sprinkle with potato chips. Bake at 350 degrees for 30 minutes. Yield: 6 servings.
